  • 2 1/2 cups roasted squash
  • 1 tsp black pepper
  • 1 tsp minced fresh rosemary
  • 1/2 tsp salt
  • 1/3 whipping cream


  1. Cut squash in half, scare out seeds and lay squash cut down, side down on oiled pan
  2. Bake in 350 oven until soft to touch. Let cool and scrape out the flesh.
  3. To make creamy sauce, add the remaining ingredients to blender or food processor and mix until smooth and silky
  4. Serve over pasta or your choice of roasted vegetables.
